Chicken Kathi Roll

(Portion size – 2 pieces)
INGREDIENTS:
• Refined flour – 200g
• Boneless Chicken – 100 g
• Ginger – ½ inch piece
• Garlic – 3 cloves
• Green chillyes chopped – ½ piece
• Salt – pinch
• Onions sliced – 2 medium pieces
• Carrot cut into thick strips – 1 medium piece
• Oil – 4 teaspoon (20ml)

Chicken roll recipe for individuals with Kidney disease.

PROCEDURE:
• Grind together ginger, garlic and two of the green chilly into a paste. Marinate chicken cubes in ginger-garlic-green chilly paste for an hour.
• Heat oil in a pan and sauté chicken cubes till done. Mix sliced onions and carrot strips.
• For the roll:
Mix all ingredients and knead soft dough. Roll out flat rounds using a rolling pin and cook on tawa (griddle) using oil.
• Smear each roti with one tablespoon of six to eight pieces of cooked chicken. Spread a spoonful of onion and carrot mixture and strips of cucumber on the roti and sprinkle salt.

Fish /Chicken Cutlet

(Portion size – 4 pieces)
INGREDIENTS:
• Any bonless large fish (rahu/katla) – 2 pieces (150g)
• Onion – 1 medium, finely chopped
• Ginger/Garlic paste – 1 teaspoon
• Green Chilly chopped – 1
• Egg Whites (beaten) – 2pieces
• Regular flour- for coating
• Salt – pinch
• Bread Crumbs – approx ¾ cup
• Refined Oil – as required

Chicken Cutlet recipe for individuals CKD patients.

PROCEDURE:
• Wash and drain fish fillets well and cut into small pieces
• Marinade the fish with chopped green chillyes, onion, ginger and garlic paste for an hour.
• Then coat them with flour giving it cutlet shape and dip into beaten egg white. Again coat with bread crumb properly and remove excess crumb.
• Heat oil in kadai and deep fry the cutlet until it turns golden brown.
• Serve hot with salad and pinch of salt.
NOTES:- You can use boneless chicken instead of fish.

Vegetable/Chicken Momo

INGREDIENTS:
• Refined Flour – 1 cup (100 g)
• Chicken(boneless) – 50 g
• Oil – 2 teaspoon
• Ginger finely chopped – 1 inch piece
• Green chilly finely chopped – ½
• Onion – 20 g
• Salt – pinch
• Black pepper crushed – 4-5pieces
• Arrowroot powder – 1 teaspoon

Momos made at home for individuals with Kidney disease.

PROCEDURE:
• Mix refined flour with 5 tablespoons of water and knead into soft dough. Cover with a damp cloth and set aside for15 minutes.
• Heat oil in a non stick wok. Add chopped onions, ginger and green chilly and sauté and pinch salt, pepper powder and mix well.
• Mix corn flour in ¼ cup water. Cook till thick, take the wok off the heat and cool.
• Divide the dough into small balls. Roll in dry flour and roll into small puris keeping the edges thin and the center thick.
• Place a portion of stuffing in the centre, fold one end over the other and give it a half moon shape. For another gather the edges and seal together. Make another momo in triangle shape.
• Heat water in a deep non stick pan. Line a bamboo basket with cabbage leaves. Apply a little sesame
oil on the momos and place them over the cabbage leaves.
• Cover and place the basket over the hot water. Cover the pan and steam for 8-10 minutes or till done.
• Uncover the pan, take the basket out and open it. Serve the momos hot.
NOTES:- If you like fried momo then you can fry the momos after steaming by adding some vegetable oil in frying pan.

Egg/ Chicken/ Paneer Vegetable Noodles

INGREDIENTS:
• Chowmein – 50 g
• Finely chopped Beans, Capsicum, Carrot – 1 cup
• Green Chilly finely chopped – 1
• Onion chopped – 2 big sized
• Turmeric powder – ½ teaspoon
• Egg white – 2pieces
• Soybean oil – 3 tablespoons
• Salt – pinch

Hakka noodles recipe for individuals with Kidney disease.

PROCEDURE:
• Take enough water in a saucepan with little salt & oil. Add noodles in it boil for 3-4 minutes. Don’t overcook the noodles, so that it doesn’t become sticky.
• Now immediately drain all the water and rinse with cold water and then dry them under fan. You can put some oil over them so that they look smooth and separate.
• Heat a pan and add 2 tablespoon oil in that.
• Add the onions first and then rest of the chopped vegetables.
• Add salt and turmeric powder and fry them until they turn brown.
• Stir them for a min and then add the noodle. And mix everything properly.
• Now you can feel the aroma of noodle.
• Fry them properly and then take the noodles out to another bowl.
• Now heat the pan and add little oil add 2 raw egg whites to it and cook it like scrambled egg/egg bhurji.
• Add the cooked chowmein into this. Mix them properly and little bit salt if required.
• Serve hot with chopped onion and 2-3 slices of cucumber.
